- Ingredients
2 cups of water
2/3 cup sugar
juice and rind of 2 lemons
- Equipment
saucepan
grater or zester
lemon squeezer
plastic tray or bowl
- Squeeze the lemon juice and grate the lemon rind. Set aside.
- Boil water and sugar in a saucepan for 5 minutes, stirring to make sure the sugar dissolves.
- Remove from heat, add the lemon juice and grated lemon rind, and leave to cool.
- Pour into a tray or bowl that can be put in a freezer. Place in the freezer for 3-4 hours.
- Stir every 30 minutes to scrape the ice crystals into the mixture. This makes a softer, finer water ice.
- You can try making other flavors with different kinds of juice or even coffee. Italians really like coffee!
